Avocado With Tomatoes & Mint

Avocado With Tomatoes & Mint
Serves 4
  • 4 small firm tomatoes
  • 2 ripe avocados
  • J tbsp chopped fresh mint
  • mint sprigs to garnish
DRESSING
  • 2 tsp white vinegar
  • 1 tsp Dijon mustard
  • 2 tbsp olive oil
  • 1/4 tsp sugar
  • salt and black pepper

STEPS :

  1. Peel the tomatoes: cut out the cores and score an "X" on the base of each, then immerse in boiling water until the skins start to split. Transfer immediately to a bowl of cold water. Peel, seed, and then coarsely chop the tomato flesh.
  2. Make the dressing: in a small bowl, whisk together the vinegar and mustard. Gradually whisk in the oil, then add the sugar, and salt and pepper to taste.
  3. Halve and pit the avocados. Brush at once with a little dressing to prevent discoloration.
  4. Combine the tomatoes, chopped mint, and dressing. Pile the tomato mixture into the avocado halves, garnish with mint sprigs, and serve at once.

Pitting an avocado

Cut the avocado in half lengthwise, through to the pit. Twist the halves and then pull them apart. Embed the blade of a chefs knife in the pit and lift it out.
