Salmon With Spinach
Serves 4
- 4 6-oz (175-g) salmon steaks
- salt and black pepper
- 1 tbsp butter
- lemon twists to garnish
SPINACH SALSA
- 2 tbsp olive oil
- 8 scallions, finely sliced
- 1 garlic clove, crushed
- 1/4 cup (60 ml) lemon juice
- 1 tsp coarse mustard
- 1 lb (500 g) spinach, finely chopped
STEPS :
- Season the salmon steaks with black pepper and dot with the butter.
- Cook the salmon steaks under the broiler, 3 in (7 cm) from the heat, for 5-6 minutes
on each side, until the fish is opaque and the flesh flakes easily.
- Meanwhile, make the spinach salsa: heat the oil in a skillet, add the scallions
and garlic, and cook, stirring, for about 1 minute. Stir in the lemon juice, mustard,
and spinach, and cook, stirring, for about 2 minutes. Transfer to a bowl and season
with salt and pepper to taste.
- Garnish the salmon with lemon twists and serve immediately, with the salsa.
