Swordfish With Orange Relish
Serves 4
- 4 6-oz (175-g) swordfish steaks
MARINADE
- juice of 1 orange
- juice of 1 lemon
- 3 garlic cloves, crushed
- salt and black pepper
ORANGE RELISH
- 2 oranges, peeled, separated into sections,and diced
- 3 tbsp olive oil

2 tbsp chopped fresh basil
STEPS :
- Make the marinade: in a shallow nonmetallic dish, combine the olive oil, orange
and lemon juices, Qdrlic, and salt and pepper to taste. Turn the swordfish teaks
in the marinade, coyer, and leave to marinate in the refrigerator for at least 1
hour.
- Make the orange relish: in a bowl, combine the oranges, olive oil, basil, and eason
with salt and pepper to taste.
- Remove the swordfish from the marinade, reserving the marinade. Place the steaks
under the broiler, 3 in (7 cm) from the heat, and broil, basting once or twice with
the marinade, for 5 minutes on each side or until the fish is opaque and the flesh
flakes easily. Serve immediately, with the relish.
TUNA WITH ORANGE RELISH
Substitute tuna steaks for the swordfish steaks and fresh cilantro for the basil
and proceed as directed.
